Our pasta is made exclusively from corn, rice and buckwheat flours mixed with pure spring water, and dried at low temperatures. Guaranteed gluten free foods that are certified and notified. Gluten is not a protein that is essential for our diet. So eliminating it does not cause any nutritional imbalance. As it is present in many cereals, which are known to be rich in fibre, it is this aspect that needs to be compensated for: so there is a need to eat legumes, fruit and vegetables to compensate this lack of fibre.
