Spaghetti alla Carbonara

Black Pepper
.375 Lbs
Pancetta Cubes or 9 to 12 Strips of Thick Cut Bacon
1 To Taste
Parmesan or Romano Cheese
1.50 Cups
Green Peas (Optional)



Cook Pancetta or Bacon in a frying pan. (If using bacon, chop into small pieces then fry in a frying pan.)

Remove from heat when done.

Either remove grease or use it depending on your own personal tastes.

Break eggs into a bowl and mix in black pepper and finely grated Parmesan or Romano cheese.

Whip eggs, pepper and cheese together.

Boil Spaghetti, then pour off water but don't rinse.

Immediately put spaghetti back into pot, and pour on mixture of eggs, pepper and cheese, along with mixing pancetta/bacon. (Add green peas if you would like.)

The heat from the unranked spaghetti will cook the eggs onto the spaghetti.

If you want it more cooked, stir over super low heat. (This will make cleaning the pan a little more difficult.)

Serve and enjoy the compliments.
